Try freezing some if you have room. And if you're unsure as to what will and what won't freeze, go to your biggest grocery store and look through their freezers. I'll bet you'll be surprised at what will freeze nicely.
And during "The" war, I remember my Grandma canning peaches with one pit included and 5 or 6 whole cloves, because getting hold of sugar to add to it was nearly impossible at that time. She'd add sugar or honey to whatever she made from them during the winter.

I wish..the heat did our garden in...I have NOTHING to can...really had hoped to do up a 1/2 bushel of pickles this year..sigh...
I don't can salsa any more..easier to freeze the tomatoes and make it fresh when we want it...
oh, but I did buy the CO peaches and put some of those up
now if only I could get a bushel of green beans and some cukes I would be set...sigh
