We love Earthquake Cake..anyone ever had that? It's an all in one sheet pan cake. No icing or frosting to make.
Some people call it upside down German Chocolate cake too!

Can we change cake to cakes ? Chocolate mocha, german chocolate, banana, fruit cake - I think you get the idea :lol:

Earthquake Cake

INGREDIENTS:

1 cup flaked coconut
1 cup chopped pecans
1 (18.25 ounce) package German chocolate cake mix 1 (8 ounce) package cream cheese
4 cups confectioners' sugar
1/2 cup butter
1 teaspoon vanilla extract



DIRECTIONS:
1.Preheat oven to 350 degrees F (175 degrees C). Lightly grease the bottom and sides of one 9 x 13 inch baking pan.
2.Layer coconut and pecans in the bottom of pan.
3.Prepare cake mix according to package instructions and pour over pecans and coconut.
4.Combine cream cheese, butter or margarine, vanilla and confectioner’s sugar and beat until smooth. Pour over cake mix.
5.\Bake at 350 degrees F (175 degrees C) for 30-35 minutes. Toothpick will not come out clean.

Another Favorite of my Family is this Made from scratch Fresh Apple Cake. Make this every September when the apples are ripe!
Fresh Apple Cake

Mix together:
1 ¼ cups oil
2 cups sugar

Add:
3 whole eggs
1 teaspoon salt 1 teaspoon baking soda 2 teaspoons vanilla 3 cups chopped apples 1 cup chopped nuts 3 cups sifted all purpose flour

Glaze:
1 stick margarine 1 cup brown sugar 1/4 cup evaporated milk

Add 1 teaspoon vanilla after this has boiled and cooled a little.

Directions:
1. Mix cake ingredients in order given.

2. Grease, flour and sprinkle baking pan lightly with cinnamon.

3. Bake at 350 degrees for one hour.

4. Let cake cool while making glaze.
5. Bring ingredients for glaze to a rolling boil; stirring constantly. Let cool slightly, add 1 teaspoon vanilla.
6. Pour over cake. Will crystallize.

wal-mart sells a slice of cake for $2.50 so some of our nearby grocery stores sell cake slices for $1.99. good for those emergencies we all have!

I dont bake anymore, but I loved to make a white layer cake and put coconut and frosting between the layers. The
frosting was a "seven minute " icing.
