Black Raspberry Cake -- I make from two layers of chocolate fudge cake w/ a layer of cream cheese frosting between the two main layers. Then, I cut each of the two layers in half (dental floss is a wonderful thing!!) and I spread a layer of black raspberries (cooked down w/ a little butter, sugar, and vanilla) between those layers, then top the whole thing w/ chocolate ganache. Very rich but very satisfying. Hmmm...I feel a craving coming on!!

My absolute favorite is Crazy Cake with fudge frosting. It's crazy because there is vinegar in it and it's mixed in the baking pan. It's amazing!!

I would have to agree with the others that said carrot with cream cheese frosting.
