If they are seedless grapes, you can just put a light syrup over them and can them in a water bath, or steam canner for about 20 minutes and they should be fine. I have done them before.

What recipe do you use for your tomato salsa? Do you have to pressure can it? I have tons of tomatoes right now. Thanks!

The roe isn't actually canned, but simply jarred and refrigerated. I took the picture because it was so pretty. It's salmon caviar and I use it on sushi rolls and stuff. It's really yummy.
Canned salmon is wonderful. Had a friend who would open the jar & stir it all up & spread on crackers. Takes 90 minutes to process :thumbdown:

I want to do some canning, but don't want to use a pressue cooker. Can anyone tell me some simple things to can and how to do it? I did can some tomatoes this year, but I would like to can other things or maybe make other things with the tomatoes. I have a garden this year and have been getting tons of stuff out of it, most of which I have frozed, but now the freezer is full. Also, there is a peach orchard not far from me where you can pick your own. Later this fall I will be able to pick greens from a friend's garden. No room to freeze them, so what can I do?

What kinds of things do you like? Sounds like you have an abundance of tomatoes...do you like chili sauce? vegetarian mincemeat? Both of those use a lot of tomatoes as you render them down until fairly thick.

You could make peach and tomatoe chutneys, they only have to be water bathed instead of pressure canned. They are so yummy. Look in your Kerr or ball canning recipes. Many things are jarred and water bathed.

You are all so good here, canning stuff. I have only ever made pickles and love Lemon pickle as I have a lemon tree that fruits all year. Also make Lemon Curd, Lemon Meringue Pie, now I am getting hungry and its too late to eat at 8 mins past midnight

I wish I could have citrus fruit.but gets too cold here. we went to California last year,my DILs Mother has an orange tree. brought some back home to Ok. amd made orange marmalade oooooohhh it is so good but getting low now. lol

I like to can anything as long as I don't have to use a pressure cooker. Thanks for all the ideas. What is the difference between jarring and water bathing?
