I have been making pickled squash for the last several years. I always hope I have a jar that can be entered for my OHCE exhiibit, but so far my squash always rises to the top!!! Not good enough fo competition, but good enought to eat.

So far this season,I have canned green pintos,blue lake green bean,crowder peas, okra, cabbage,carrots,made beef veggie soup, new potatoes. Yes have eaten creamed peas,carrots etc. hot cornbread and butter with them. lol Have cut a bunch of different veggies and forzen them for stir fry. my pears,apples etc are not ready yet. Boy I am tired just reading all this. lol

Yup, froze 16 packages of grated zucchini (for bread) today. Will probably have more in a few days. My son who lives across the street, comes over and helps when I have things like this to process. That way he gets some to take home and makes the work go quicker for me.

Yes, I have a garden and can all summer long. Jams, jellies, berries, peaches, pears, apricots, beets, and anything else I can find. The list is long and boring, but I know you can imagine! :D

I would think you would do it like turnip greens or spinach. Doesn't it have to be cooked & rinsed several times to get the toxins out. I can't remember. Probably cook then put into hot jars & process maybe 30 minutes. Maybe somebody else knows.

I just canned 40 quarts of peaches. And about 8 pints. Not to mention about that many quarts of soup and about 20 quarts of newpotatoes and English Peas. I don't plan on starving. It's always been a way of life with my family. I love looking at the pantry filled with jars of stuff. I have even won a few ribbons on some of my stuff at the county fair. It's good to hear someoneelse enjoys it as uch as I do.

We have to have a large garden. We have 9 of 11 kids still a home. I worked today on zucchini. I peel and shredd it and then I freeze it. was gonna make zucchini bread today but had an appt to get ready for. so think I'll make some tomorrow. then what I freeze goes great in casseroles, more bread, muffins. its amazing what I can sneak it in and the kids get more veggies. have allready put away a lot of my green beans, infact I think my vines are done. my tomatos are not doing good this yr. I hope that changes. I can a lot of them, use a lot. I can peppers, pickles anything I can.. haha

I caned 28 qt pickled beets . But my garden didn't do good this year . We need rain really bad.

Yup...put up 14 qrts of Tomato Juice this week. I have a laundry basket full of tomatoes again and I'll do some more tomorrow or the next day. The only thing I don't like is that it cuts into my quilting time :?
