Giblet gravy

This was fun to read everyones's different ideas for dressing. Don't you think many of the old recipes came about because they would not waste anything? Personally, I don't use the giblets anymore. I used to simmer them and then use just the broth for my gravy but have finally given that up, also. I make my gravy with some canned chicken broth instead of water, along with the juice left in the turkey roaster pan.
