Yes, I have tried several different doughs over the years, and this one seems the best for my purposes. It is one I can roll out without difficulty with my arthritic hands and wrists. And yes, I use Royal icing. I made 5 batches of dough and 6 batches of royal icing.

Gingerbread Dough: You need a large stand mixer as this gets rather stiff.

    1cup vegetable shortening
    1 cup sugar
    2 teaspoons baking powder
    2 teaspoons ginger
    1 teaspoon baking soda
    1 teaspoon salt
    1 teaspoon ground cinnamon
    1/2 teaspoon ground cloves
1 cup dark (not light or blackstrap) molasses
    2 large eggs
    2 tablespoons white vinegar
    5 cups unbleached all-purpose flour

In the bowl of a large stand mixer fitted with the paddle attachment, combine the shortening and sugar on medium speed untill well combined.
Add the baking powder, ginger, baking soda, salt, cinnamon, & cloves and beat until incorporated. ( I blend these together in a small bowl first before adding to the sugar mixture).
Add the molasses, eggs, and vinegar and beat until smooth, scraping down the sides of the bowl once or twice as necessary.
Add the flour, 1 cup at a time, and mix on low until smooth. Scrape the dough onto a sheet of plastic wrap and press into a rough square. Wrap tightly and refrigerate for at least 3 hours and up to 3 days.

Roll out to approx. 1/4" thickness and cut into desired shapes. Bake in 350 oven about 12 minutes. Transfer to cooling racks to cool.
