    Decided the best way to beat the heat is smoke some meat! If you can' beat em, join em!!

    Smoking a brisket, making mac n cheese (with a great Dubliner cheese). Going to head to the pool.

    All in all, it is going to be a great day!!!!!

    we just bought a smoker and we smoked a brisket but it did not come out that great, do you happen to have a good brine recipe or do you just put a rub on it? would love to use the smoker this weekend but am afraid of smoking another icky tasting brisket...

    I make a rub. Usually, brown sugar, salt, paprika and a bunch of other stuff.

    How long did you smoke it for? What kind of wood did you use? Usually, I smoke with apple and cherry woods. Smoking is something that takes a bit of practice, so don't be discouraged.

    Around 1730 or so... whenever we are done at the pool and the beer gets chilled!! :D

    I am quite a few hours from Louisville. :( Come on over though!!!! LOL


    BTW, maybe I am onto something with the smoking thing. It is beginning to cloud up. Still hotter than Hades, but getting cloudy!! :)
