    so, since it is just a dreary, drizzly COLD day, I am spending it in the kitchen cooking for the week!
    I have one crockpot with beef roast in it to make Machaca beef for enchiladas, one crock pot with a backing hen roasting with fresh rosemary and white wine, I have mushroom & barley soup going on the stove, pork ribs out on the smoker, strawberries soaking in sugar for shortcakes tonight and a ham/spinache quiche in the oven!

    whew...smells crazy in there right now...

    off to start some seeds, for when it does get SPRING again..not this week though..cold all week...darn it...

    Wow! That's very industrious! ... and here I sit at the computer ... LOL! :lol: I've never planned cooking like that. If I put something in a crock pot, its a pot roast w/potatoes & carrots and we'll eat those leftovers for 2 or 3 days ... that's as far as I plan ahead in cooking. You're cooking is mind-boggling to me!

    I really enjoy cooking that way. Cooking really isn't my favorite thing to do.. SO why not save time and cook a lot at once (freeze) then have the week to self ) well never to self but sure feels like it . I've worked all my life and loved finding short cuts to make life easier. WAY TO GO.....

    when I was a single mom, I learned how to prep meals ahead..if you have the meat cooked, you can throw most anything together out of it...since I am very limited on what I can eat, it really helps to do things this way..that I since I do not eat much it means I can make small meals with variety instead of just heating up the same leftovers all week....yeah for me...
    The machaca beef will make great enchiladas, and burritos and taco soup if need be! Only my hubby really eats it, so a 3# roast goes quite a ways! :thumbup:
    The chicken is more for me, so it will be roasted chicken one night, then chicken salad for lunches all week!
    the mushroom soup is to go with the ribs tonight(boys are coming over tonight), along with potato salad and the strawberry shortcake, the quiche will go with the left over mushroom soup later this week!
    PLANS..can't wait to see how many changes will be made during the week..hehehehe
