I just recently made 4 of the burrito/sausage style pillowcases too! It was my first time ever doing so, and it was a lot of fun. I didn't sew the flange down and didn't experience any flipping or twisting after washing/drying. Maybe as it ages, it might get wonky, but I guess at that point I can press it and stitch it down.
