I do know if ground beef is bright red/pink color I won't buy it. Ground beef should be a dark brown red color. I prefer ground venison to ground beef but sometimes DH doesn't get to hunt during deer season.

It is too bad the prices at the store are not reflected to the cattlemen!!
My folks sold out this year, and yet we kept our few so we can have that yearly beef. Not sure how long it will last, but the smell of store bought beef cooking is disheartening and unbearable to me to say the least.
Cattlemen tend to get the blame for a lot of things it seems, (including their latest of GAS to the ozone from belching cows)but yet they do not get the benefits of the high prices?
The prices in the store seem to keep going up for the consumer whether it be corn and beans or cattle feed and milk replacer.

I know what you mean by the grocery store beef. It's not the same at all. Even buying a lb of extra lean ground beef I get a skillet full of liquid or grease whatever it is. I'd rather eat a serving of cooked dry beans or eggs. Don't get me started on egg quality! LOL.

I raise grass fed cows and the price of heifers is through the roof. I just paid 800 for them. I don't eat much beef because I also was born with a bad kidney but believe you me, the rancher is not getting rich on the new price. Also, here we are unable to buy gasoline that does not have at least 10% ethanol. If we would ever stop having freezing weather, I plan on a garden. The produce in our stores is not very good and squash is 2.99 and tomatoes 3.49. Won't take much to recoop the price of seed and plants. However, I just paid 2.49 each for pepper plants. Should have started them myself.

I buy 93/7 ground beef (sirloin?) at WalMart, Oxford, MS for $3.18/lb. The meat is not as juicy because there is so little fat, but it works great for my gastric bypass diet of little fat and lots of protein. Since there is so little shrinkage, I am able to get extra patties for each pound to make up for the added price/lb.

We grind our own sausage - my husband buys pork on sale and grinds it - less fat and better/can add flavor. A freezer is definitely the answer to help economy - buy it, immediately divide it into portions when you get home and throw it in the freezer, being careful to date it and mark what it is. It is amazing how freezing can turn something from looking obvious as to the content - to what is it? :-)
