The saying - you can't make a silk purse out of a sow's ear means that you can't start with something poorly suited or inferior and expect to make it into something wonderful anyway. If you want a silk purse, you need to start with silk. (At least that's how I interpret the old saying)

My grandmother & her father--my great grandfather, had a saying for almost everything. They also only planted certain things on certain days or moon cycles.
