Thanks lucylockett, I want to try this but you'll have to tell us what a claxton fruit cake is. Is that a brand name and if it is I would think you could use any bakery fruit cake, as long as it is good? We may not be able to get that particular cake here in Southeast Ky.

Oops! I forget how far this board travels! Claxton Fruit Cake is a staple here in the deep south! Sure, any good baked fruit cake should substitute fine. It's about a pound of cake chocked full of fruit and nuts with a bit of spices thrown in.

These cookie recipes sound delicious! I make Oat Bran Muffins for my husband, as he eats 3 of them a day along with a large fruit salad..
His muffins have dates, dried cranberries, walnuts (lots!), and chocolate chips and sometimes I add sunflower nuts or coconut... He loves them, and they help keep his cholesterol down.. Been doing this for years.. |

The fruit cake recipe I use is from the Eagle Brand Sweetened Condensed Milk recipe book. The instructions give cooking times for making it as cookies, loaf or even in coffee cans. It is a very good fruit cake, people that don't like fruitcake like this recipe. If you want the recipe PM me.
