    One of my favourite summer meals, particularly when I have garden fresh tomatoes (so tasty, compared to the "plastic" greenhouse type!!) is a

    ~~~~~~~~~~~~
    BLT+Cheese Salad
    ~~~~~~~~~~~~
    *Lots of lettuce
    *top with chopped tomatoes
    *top with freshly cooked, and chopped back bacon
    *top with shredded cheddar (melts a little from the heat of the back bacon
    *serve with favourite dressing ... for me that'd be Lemon Dressing!
    mmmmmmmmmmmmmmm good!!!!

    It is supposed to be mid-to high 80s today. We are having BLTs for dinner. I usually bake a full two pounds of bacon on the weekends. DH uses it for his breakfasts and lunches. And I can use it for my lunch too. We like to use the pepper bacon from WalMart. And We can bake the entire package at one time. This helps with not having a partial package going bad in the fridge. Last night we just had corn on the cob. LOVE those nights too.

    Hi frauhahn,

    All great ideas. If you have a small electric grill or regular grill you can cook on the grill on your patio, porch, etc.

    I used to make foil meals with my kids all the time during the summer. Take a piece of heavy duty foil if available other wise regular foil doubled will work. Take a piece of meat, it can be frozen, cut up a potato, add some veggies, salt, pepper and a bit of butter, then cook on the grill, turn over after about five or ten minutes, then open on a plate and enjoy!

    I used to keep frozen meat patties of hamburger, skinless boneless chicken, turkey and pork, hot dogs, etc. available. A bag of potatoes, wash and cut into pieces, added with your veggie of the day, gives great choices for kids of all ages. What is great is that every one gets to choose what they want for dinner and then there is no complaining. The neighborhood kids got so they'd bring their foil dinners and we'd have a big cook out.

    These foil meals are from the scouts and lots of fun for kids of all ages.

    It is a scorcher here today and I am sitting in the air conditioning making a new chili recipe (laughter). Go figure! Will taste great tonight.

    we make taco's in a bag. we cook the hamburger and add the taco spices to the meat then we open small individual
    dorito's add the meat, cheese, lettuce and eat right from the bags the kids think this is great

    While living with hubby & 4 kids in a 19' travel trailer - we were building a home in the woods of NW Montana - I learned to fix ANYTHING on a Weber grill. Pizza, casseroles, nachos, etc. - loved that grill!

    Suggestions:
    *Grilled tuna salad sandwiches w/ shredded cheese mixed in
    *Green salad w/ chopped pear, walnuts, red onion slices, bacon bits, olive oil & flavored vinegar
    *Pasta salad entree' w/ steamed mixed veggies
    *Nachos loaded w/ beans, cheese, lettuce, olives, etc
    *Taco salad
    *Sloppy Joes - just brown the onion & burger, fill a bun & top w/ cheese - quick
    *Microwave baked potatoes w/ chili & shredded cheese topping *or w/ sour cream, steamed broccoli, cheese, bacon bits topping
    *Imitation or real crab mixed w/ curry powder, shredded cheese, mayo - spread on whole grain bread or English muffins & place under broiler until bubbly

    Last suggestion - take out!!

    little philo tarts filled with imitation crab and fresh peas and a little mayo great for a hot day and you don't have to cook

    I'm with ya!! Weather called for upper 90's here today, it is 3pm and 101.4!!! I started a dish in my crockpot, made a menu for the rest of the week that calls for fruits, salads, sandwiches and a couple more meals in the crock pot. Cereals for breakfast and anything else in the microwave! Oh!! Can't forget the Bluebell Ice Cream for dessert! :lol:
