Try grilling. We had grilled tilapia & chicken(for those that don't eat fish)brush with olive oil and I used zesty Mrs Dash, sea salt and coarse pepper. Everyone tried the fish and loved it, even DD who swears she hates fish, she wanted more. And grilled yellow and zuchinni squash with onion on a grilling pan with caribbean Mrs. Dash and drizzled with olive oil, salt & pepper to taste and a salad with mixed greens.Quick and easy & delish!

Too hot to cook? It was too hot to eat here today. I had a Slushie from the 7-11. Orange Crush is my favourite.

just buy the roasted whole chicken..most stores have them.
i pull it all apart, chicken tacos..or make roll-ups with salad fixings.
i have also plugged in the slow cooker out on the deck..

I love gazpacho. Also hot here and I cook a roast beef early in the morning. We will have Thai beef salads.

Tortellini Salad or Chinese Salad. I posted the recipes in the recipe section quite some time ago, and they are very good for a summer meal. You can add chicken to the Chinese Salad and make it a meal. I sometimes buy a pre cooked rotisserie chicken and add some to the salad, so I don't have to heat up the kitchen.

    Make a Quinoa salad!
1/8 C. dry Quinoa per person to 1/4 C. boiling water ( make it like rice) turn to simmer w/lid on 15 mins.
1 bunch parsley chopped kind of fine, I use the stems also.
    red bell pepper diced
    tomato diced
    red onion diced
    mint , chopped
    radish chopped
olive oil & lemon juice to taste,
    kosher salt.
    eat with pita, or crackers.
This and some Hummus.... I could eat like this every day!
