    How about some chicken salad, buy a precooked rotisserie chicken at the store (take off the meat) or use canned chicken. OR tuna salad if you like fish. Then serve it stuffed in a hollowed out tomato with some fruit or jello salad, cottage cheese and stop by the local pizza place and get some breadsticks. Or do a cold cuts plate, meat, cheese, fruit & crackers. We eat "roll ups" too. Take 10" size flour tortillas, I warm it in the microwave for about 15 seconds to soften them so they will roll up easier, then spread them with garden flavored cream cheese, top with ham, turkey or bacon (or all 3) add some shredded cheese, olives, shredded lettuce, tomatoes, avacado slices or what ever you like in them. Roll them up like a burrito. Serve them with some chips and fruit.

    Taco Salad is my 'go to' meal. Easy, fast, and most ingredients already in refrigerator/pantry. Even Grandaughters love it.

    I love to use the crock pot for those hot days! So many things you can do. Pot roast with veggies just the other day.
