    I know you are suppose to soak beans I DON'T

    Vegetable Bean Soup
    4 servings

    1 c dried great northern or navy beans (rinsed)
    1 c diced carrots
    1/2 c diced onion
    1/2 c diced celery
    5 lettuce leaves chopped
    1/4 rice
    1 c water
    1 28 oz can tomato puree
    1 tsp dried parsley or 1 tbsp fresh
    1/2 tsp pepper
    1 tsp salt

    Put it all in a large pot and simmer 1 - 1 1/2 hours or until beans are done.


    Spinach Bean Soup
    serves 4

    1 c dried northern or navy beans (rinsed)
    1 c chopped onion
    2 bags fresh spinach chopped
    1 glove chopped garlic
    1 tbsp olive oil
    5 c water
    1 tsp salt
    1/2 tsp pepper
    4 thin slices italian bread toasted
    1/4 c grated romamo cheese or any other italian cheese

    In a large put heat oil, add onion and garlic. saute until trasparent. Add water and beans, simmer about an hour or until beans are cooked. Add spinach, salt, pepper, Cook until spinach is wilted. Put toasted bread in the bowl add soup and top with romano cheese.


    Vegetable Barley Soup
    serves 4

    1 c uncooked barley
    1 c water
    1 28 oz can tomato puree
    1/2 c chopped onion
    1/4 c chopped celery
    1/2 c corn
    1/2 c green beans
    1/2 c peas
    1/2 tsp pepper
    1 tsp salt

    Put it all in a pot simmer on low about 45 minutes


    Lentil Soup
    4 servings

    1 c dried lentils
    1/2 c chopped onion
    1/2 c chopped green or red bell pepper
    1/2 c chopped celery
    1 c chopped carrots
    5 c water
    1 tsp salt
    1/2 tsp pepper

    Put eveything in a pot simmer for about an hour.
    To guild the lily I put it in an oven proof bowl and top it with either swiss cheese or mozzarella cheese and then put it undeer the broiler for a few mintes to get the cheese all gooey and melted.


    Stuffed Tomatoes
    serves 4 2 tomatoes each

    8 large tomaotes
    1 c cold cooked rice (I like brown rice for this)
    1/4 c chopped onion
    1/4 c chopped green pepper
    1 egg
    1 tsp salt
    1/2 tsp pepper
    1 c shredded cheese.......your choice

    Spray a baking dish with cooking spray. Cut the tomatoe so that you can scoop out the inside but have about 1/4' of the tomato left ( I hope I am explaining it right) Chop the tomato you scopped put aand put it in a bowl. Add everything else except the hollowed out tomato. Mix well. Divide the mixture and fill the hole in the tomato. Put the stuffed tomaotes in the baking dish. Cover bake 30 minutes. Take the cover and bake 15 minutes longer unilt the tops are crispy. If you want to with the last 15 minutes you can top with more cheese.


    Bean Dip
    1 c cooked navy beans
    1/4 c tahini ( you can replace it with peanut butter)
    1 glove garlic crushed
    2 tbsp lemon juice
    salt and pepper to taste

    Put everything in a bowl and I crush it with the back of a spoon. This is good with toasted pita chips


    My Own Pasta serves 4

    It doesn't have a name I made up the recipe and don't know what to call it

    8 oz any long wideish pasta
    1 bag fresh spinach (uncooked)
    1/2 c tahini or peanut butter
    1 clove garlic
    1/2 tsp salt
    1/4 tsp pepper
    1/2 c grated romano cheese
    a little water

    While pasta is cooking Put the rest of the ingredents in the blender add a little water and blemd until smooth, I start off with about 1/4 c water and add more if I need it. Toss sauce with pasta. Top with extra chees if you want to.

    Joyce's Pasta
    serves 4

    1/2 c cooked beans (your choice)
    8 oz pasta whole wheat is best
    1 or 2 fresh tomatoes chopped
    1/4 c fresh chopped basil
    1 large glove garlic minced
    1 tbsp olive oil
    grated romano cheese
    salt and pepper to taste

    Cook the pasta,heat the beans. Put in a large bowl and add the remaining ingredents except the romano cheese. Toss and top with the cheese.


    Rice and Beans

    1 c cooked beans
    2 c cooked rice
    2 large bell peppers cut in chunks
    2 large onions cut in chunks
    1 tbs olive oil
    1 packet taco seasoning mix
    1 c shreaded cheddar cheese
    salsa

    Heat oil add onion and pepper, Saute until soft add beans, water and seasoning mix simmer until thick. Put rice in a bowl top with beans mixture, top with cheese and salsa



    Mexican Cornbread

    your recipe for corn bread add the following
    1/2 c chopped bell pepper
    1/2 chopped onion
    1 c grated cheddar cheese
    hot red pepper flakes (I omit this I don't like hot)

    Bake as you normally would. I love this for lunch.


    Fritatta
    serves 4

    3 eggs
    1/4 milk
    1/4 shredded cheddar cheese
    1 c chopped onion
    1/2 c chopped bell pepper
    1 tbp olive oil
    1 c cooked of either broccoli, cauliflower or asparagus
    1/2 tsp salt
    1/4 tsp pepper

    Heat oven to 350. Saute onion and pepper in oil until transparent. In a bowl beat eggs and milk stir in remaining ingredents. Spray a baking dishor pie pan with cooking spray. Pour egg mixtued into baking dish and bake 45 minutes until set and the top is golden


    Spinach Quiche,,,crustless
    serves 4

    1 bag spinach cooked and drained
    2 eggs
    1 c milk
    1 tbsp flour
    1 c shredded swiss cheese
    1/2 tsp salt
    1/2 tsp pepper

    heat oven to 350
    Spray pie pan with cooking spray. Beat or wisk eggs, milk and flour. Stir in remaining ingredents. Pour into pie pan and bake 35-40 minutes or until set and golden


    Crepes
    serves 4

    2 eggs
    1 c flour
    1 c milk
    1 c water
    1/2 tsp salt
    filling follows

    beat above until blended
    heat frying pan and spray with cooking spray, Por 1/4 c batter in the center and swirl so that it is THIN. cook 1 minute flip over cook another minute Put 1/4 of the fillinmg in center and roll.

    Filling
    Apple
    2 chopped apples
    2 tbsp water
    1 tbsp cinnamon
    put in microwave proof bowl and microwave for 4 minute or until soft.

    Pear
    2 chopped pears
    2 tbp water
    1/2 tsp grounds cloves
    microwave as above

    Strawberries
    1 c sliced

    Cranberry Orange
    3 oranges peeled and chopped
    2 tbsp dried cranberries
    1 tbsp orange juice
    Mix and fill crepe.

    An umbrella won't help the turtle can shoot you in the eye. I don't think it could reach above your head and rain down on you.

    Missy I wasn't thinking fire I was thinking more along the lines of a TV remote or a pair of scissors. OMG a pincushion now that would hurt if that came flying out.
