This is delicious............not the real thing but when you crave dessert it is great as a topping on Angel Food cake with berries.
Almost Cool Whip
1/2 tsp knox gelatin
1 tbsp cold water
3 tbsp boiling water
1/2 c water
1/2 c powdered non fat dry milk
2 1/2 Tbsp sugar
1 Tbsp oil
1/2 tsp vanilla
Put dry milk and water in a med size bowl stir. Put bowl in fridge for about 4 hours or over night. In a cup put 1 Tbsp cold water. Sprinkle gelatin on top. Boil 3 Tbsp water and stir into the cold water gelatin. Put in fridge for about 5 minutes. Take bowl with milk and beat until fluffy and creamy. Add, gelatin, sugar and vanilla. Beat until thickish. Put in fridge for 15 minutes. Stir before using.
Makes 2 cups
2 Tbsp serving is 15 calories

So sorry to hear about your mom Bonnie hope all is improving. I'm saying a prayer for you both.
It got up to 51 today very nice so went for a 1.5 mi walk with our little
Jasper at the park I hope the severe cold leaves all of you in the thick of it really soon. It was 21 deg this morning and I can't imagine a minus anything and still function.
We are having scallop potatoes for dinner, I know they are not on any weight loss plan I ever saw, but needed to use up what I had left from the holiday cooking. Will have a big salad with it so if I eat the salad first I won't have room for many potatoes. Trying to be positive ok.
We don't watch much sports so i don't have any Super Bowl food to share. But I am cheering the Packers.
