    The recipe for MJ

    Frattata

    5 eggs
    1/4 c milk
    1 oz shredded cheddar cheese
    1/4 tsp salt
    1/8 tsp black pepper
    cooked veggies of your choice (i use a combo of onion. bell pepper, spinach, broccoli or cauliflower)

    heat oven to 350. spray a 6 cupcake pan with cooking spray. beat milk and egg. mix in cheese. in each cupcake fill with veggies. divide egg mixture between the 6 cups. bake about 1/2 hour or untl set.
    each cup is 1 protein serving about 90 calories.

    OH this isn't real cassata I made the recipe up myself and call it cassata. it has similar ingredents and flavor.

In the meantime I have this thread (and others like it on this site) and the weight loss forum that I visit daily.

    Black bean soup with orange, salad and a slice of very healthy bread. 307 cal. Have enough cal. left for toast and peanut butter.

    My DIL has about 125 lbs to loose and she came to me just before Christmas and said she wanted to get healthy in the New Year could I help her. I am so happy she asked. So I'm helping her to start eating better and we are going walking every morning. We walked 2 miles this morning.

    This is a bonus for me because I already walk 2 miles with my SIL at 5:20 am then do my elliptical training. So it just adds more movement to my day and helps her. Doing a happy dance for both of us.

    Holey moley, it's only Jan 4th and we are up to 43 pages! Time to buckle up, it's going to be a wild ride. Your quilts are great Carrie, I especially love the second one. And I'm loving the recipes, I am definitely going to try the frittata. I made baked oatmeal on Sunday and thought of you Tru, it was very yummy.

    I had breaded baked chicken and a green salad with a honey mustard dressing and shredded cheddar cheese sprinkled on top for dinner. I could eat that every night. Remember I don't count calories, I have just changed my eating habits and the amounts that I eat. I aslo drank more water and only had 1 glass of diet soda. I make lunch my biggest meal of the day and have a snack before bed. If I don't have a snack then I wake up during the night with stomach cramps and I don't like to have my sleep interrupted. It makes for a cranky mommy. LOL!!
