    Preheat oven to 375.
    Heat a Dutch oven coated with cooking spray over medium-high heat.

    Add chard, squash, onion, bell pepper, carrot and salt;

    sauté 10 minutes or until tender.

    Melt butter in a saucepan over medium heat.

    Add garlic;

    sauté 30 seconds.

    Add flour, and cook 1 minute. Stir constantly with a whisk.

    Gradually add milk, stirring with a whisk until blended.

    Cook until thick about 4 minutes.

    Remove from heat,

    add ¼ cup Parmesan cheese.

    Stir until cheese melts.

    Combine ricotta, cottage cheese,½ cup Asiago and oregano in a bowl.

    Spread 2 tbsp milk mixture in bottom of 8 inch square pan sprayed with cooking spray.

    Arrange 2 noodles over milk mixture, top with half of the ricotta mixture, half of vegetable mixture, and half cup of milk mixture.

    Repeat layers, ending with noodles.

    Spread remaining milk mixture over noodles.

    Sprinkle with ½ cup Asiago cheese and 2 Tbl. Parmesan cheese.

    Bake at 375 for 45 minutes.

    Let stand 15 minutes.

    Yield: 6 servings
    Per serving: 308 calories, 10.3g fat, 3.3g fiber, 30.8g carbs

    Kathy’s Fruit Salad
    Kathy (baggybritches)via DWLZ Cookbook - Allnew 2

    16 oz crushed pineapple in juice, unsweetened
    16 oz peach slices in juice
    16 oz fruit cocktail in juice
    3 bananas, sliced
    2 pkgs instant vanilla pudding

    Leave juices on fruit.
    Sprinkle pudding on top of fruit and stir.
    Yields: 8 servings
    Per serving: 163 calories, 1g fat, 1g fiber

    OMG these are sooooooooooo good I make them all the time for myself except I use carrots instead of zucchini. I use this recipe to make meatloaf too.

    BonniFeltz........................I checked on line looking for instand brown rice and can't find it. What company makes it, where do you buy it?????????? I love brown rice but the cooking time is 45 minuted years ago Arrowhead Mills had and instant brown rice that cooked in 15 minutes, I think they stopped making it beacuse I can't find in anyplace.

    I know that my local Wal Mart (super wal mart) carries instant brown rice. I'm not sure what other stores might be in your area that would but I'd try that first. I've always seen MINUTE rice brand.

    I will be staying in North Ogden with some friends from Approximately September 2 - 13, 2010. My first vacation since...um....since I can remember?
