HOLY MAC AND CHEESE BATMAN!!
I just made the mac and cheese that the Hungry Girl included in her mailing today. It was to die for! Even my mom and nephews LOVED it.
So, easy and ohhh so good.

24 oz (2 bags) broccoli with cheese sauce (or cauliflower w/cheese sauce)
3 wedges of Light Laughing Cow Creamy Swiss
2 cups uncooked Barilla Plus Rotini (or other whole grain pasta)
Boil the water for the pasta (I add some chicken soup base for extra flavor in the pasta). Add the pasta per the directions on the box.
While pasta is cooking, place both bags of broccoli and cheese sauce in a 2 quart dish with a lid. Microwave for 12-16 minutes until piping hot. Stir well to distribute cheese sauce. Remove from microwave (keep lid on bowl as it continues to cook).
Place unwrapped cheese wedges in small container and heat in microwave until smooth and melted (about 1 minute).
Drain pasta and add it to the broccoli and stir well until cheese sauce is well distributed. Add the melted cheese wedges and stir until well blended.
Salt and pepper optional.
