    I wanted to encourage everyone to eat good and share what they are doing for food this weekend. It is beautiful here today. Only 64 degrees and breezy. I decided since it was so nice to do something that didn't require much work but really packed a punch of flavor and nutrition.

    So, I placed a 6 oz filet of salmon on my microwave steaming dish and topped it with 2 tbsp of honey. I then sliced a yellow squash paperthin and spread that around and on top of the salmon. Popped it in the microwave for six minutes. In the mean time I had chicken stock boiling for whole wheat rotini pasta. Once the steaming was finished and the pasta was done, I placed the pasta in the pasta bowl and topped it with the salmon and squash.

    My mom was in the garage and she came in and said it smelled WONDERFUL! I love it when that happens. LOL

    It was very filling loaded with protein and nutrition.

    What kind of things are you guys eating? How are you cooking it?

    Let's give each other good ideas on what to eat and how to fix it so we can all enjoy the benefits of the weight we are losing.

    I'm fixing a Boca burger (soy protein - no meat) w/ no bread. Grilling tomatoes, peppers, onions & mushrooms (all fresh) & topping the burger. My son is over & asked for one too. However, he is very skinny so I will put his on flat bread w/ hummus. He can use the extra calories. YUM! YUM!

    Oh great idea!! I love hummus!!

    Oh my goodness those tomatoes, peppers, onions and mushrooms sound so good on top of the boca burger.

    What is the nutritional info on the boca burgers. I am always interested in comparing it to beef and elk.

    They are only 100 calories w/ 5 calories from fat. It is 19g protein and total of 1 g fat. And it is 6 g fiber. I don't eat red meat. So these are an awesome replacement.

    Oh yeah. 0 cholesterol. A hamburger has 13 g fat, 65 g cholesterol. I admit that a burger has 25 g protein, but too many other bad stuff for me.

    OK today is Fathers Day and I'm cooking healthy today. Today we are having Char on the grill (fish) grilled veggies. That is for lunch. DH wanted steak tips for dinner But I got Buffaloe tips instead A lot less fat and where I go they are grass fed.

    Can I come and eat at your house today? LOL

    I love fish on the grill especially with the grilled veggies. I usually make a packet that has the fish and the veggies in it and then plop it on the grill. My stepdad sometimes uses cedar planks to use on the grill with the fish.

    Buffalo is plentiful here. It is incredibly lean and very tasty. So is elk. We have a freezer full of elk.

    Sounds like you are doing really well.
