    btw, I don't peel the zucchini for bread. I just made some on Friday - it's practically gone already.

    A zucchini that size would make more than a dozen loaves, easy. ;-)

    Get a mandolin or veggie peeler and cut thin, realy thin ribbons of the monster Zuke. Drop it in a pot of boiling water for maybe 3 minutes drain and cover with sauce.

    Well, I grow heaps of them here every year! They are very common in New Zealand. We call them marrows. They are just overgrown zucchini.

    In Australia we call them marrows lol but I guess even marrows are just overgrown Zuccuni's.
    We dig the centre seeds out and stuff them with mince and veges and rice YUMMY. :D :D

    We get big ones like that zucchini!! Either steam it, with or without skin/seeds, or make awesome Zucchini Dessert Squares, from a recipe here on Quilting Paradise! Everyone swears there are apples in the dessert. (Remove all seeds, so there are no "clues" that you are using zucchini !)

    I'm diabetic and love pasta - actually the sauce more than the pasta. I take zucchini, cube it, steam it, and cover it with spaghetti sauce. It's really good and the greatest thing is almost no carbs.
