    I hate cooking just for me so when my hubby is gone I just cook up a batch of chili or spaghetti and eat off of that for 2 or 3 days!

    Spinach, kale, romaine lettuce salad with roasted veggies and cubed chicken salad. (On a diet, can you tell?)

    I made 2 things that didn't really go together but I had to use them up tonight! Acorn squash baked with a diced apple, butter & brown sugar , and a Stromboli. Delish!

    I was wondering. It sounds a bit too healthy to be super tasty even for me. Enjoy and best wishes with the diet.

    I'm having a Stouffer's thing! It's some kind of beef with vegies. Doesn't taste like much!

    I just made a new recipe that both my husband and I loved. I found it on Foodnetwork, I think it was called Maple glaze chicken. I didn't have all the ingredients so this was my version.

    2 salted chicken breasts cut in chunks, brown for 4-5 in olive oil. remove from skillet when cooked.

    Put in 1/2 onion chopped, 1 apple cut and pealed into skillet to brown.

    Make the glaze: 1/4c maple syrup, 1/4c apple cider vinegar (I substituted raspberry vinaigrette dressing) and 1/2c ckn broth. add to apple onion mix and boil down until it is about 3/4 gone, add chicken back in and glaze. Cook about 2-3 mins.

    Served with baked sweet potatoes and corn bread.

    Tonight was burgers on the grill as we both had meetings/other things going on. It's just 2 of us so meals are frequently a challenge. Other ideas...chicken strips marinated in a honey mustard dressing sauteed with a bit of butter. Turn frequently until marinade carmalizes. Quite tasty. Meatloaf is a fav of mine but not DH. Lunch for me the next day or 2. Can't beat the $6. pre-cooked chickens from the grocery store. Even for 2 of us they are at least 2 meals. Grilled summer sausage? Lots of grilling here. Don't do flour so that's relatively limiting. Will do the quesedea (sp) thing with either chicken or spiced ground beef. Breakfast for dinner. Creamed chipped beef (aka SOS).
