I made pasta with homemade tomato sauce with ground veal, onions, garlic and shallots. For dessert, blueberry and pineapple cobbler topped with coconut. Yum!! My husband had two serving of dessert.

We had marinated - in fat-free italian dressing- fried chicken, wild rice, and cauliflower. Later in the week I'm making a big pot of chili, we eat all kinds of food year around. Fat boy ice cream sandwiches for dessert.

Meatloaf
2 lbs ground beef (I sometimes use 1/2 beef 1/2 ground turkey)
1/2 c cubed cheddar cheese
1/2 c oatmeal (uncooked)
1/2 c chopped onion
1/4 c chopped bell pepper
1 egg
1/2 tsp pepper
1 tsp salt
1/4 c ketchup
about 6 slices of bacon ( depending on how wide the slices are)
In a large bowl mix everything together except the ketchup amd bacon. Put mixture into a loaf pan. Spread ketchup over top of loaf. Put bacon sliced overlaping on top of that. Bake at 375 about 45minute -1 hour. I don't know how many this would serve as I like leftovers for sandwiches
