Thanks everyone! I've messaged a few people with the recipe but I can't keep up so I'm going to post it here for everyone. Enjoy! :D

Apple Crisp (And Caramel Apple Crisp)

5 tart apples, peeled, cored and sliced
    1/4 c. sugar
    1 tsp. cinnamon
    1 c. water
    1/3 c. quick oats
    25 vanilla wafers, crushed
    1/4 c. packed brown sugar
1/2 c. cold butter or margarine, cut up
(If making Caramel Apple Crisp, you'll need 1/2 c. caramel ice
    cream topping)

Preheat oven to 400 degrees. Combine the apples, sugar and cinnamon. Transfer to a greased 8" square pan. In a medium bowl, combine wafers, oats and brown sugar. Cut in margarine until mixture is crumbly. Set aside. If making Caramel Apple Crisp, pour caramel topping over apples in the pan. Pour water over apples. Sprinkle wafers mix over the top. Bake 40-45 minutes or until apples are tender. Serve warm.

You put oatmeal in your apple crisp? I have never had it that way. We have always used rolled wheat. (It is sold under the Krusteaz brand as "Zoom" hot cereal. Try it, you will love it.

Boy I have been reading all the comments. I would have been sooooo disappointed if the recipe didn't get posted, Thanks so much. I live 30 min from Apple Hill in CA and we go up every week for more apples. I can't wait.

With the cooks masquerading as quilters here, I better start dieting now, before I meet any more of you!

The honey crisp apples are ready. Just had one today and friend is bringing some back from Minnesota in October. Yummy.

I've never heard of "Zoom" before. I'll have to look for it. We have a very few "Krusteaz" products in our stores out here but I have seen them. My grandmother always made her Apple Crisps with oatmeal, so I always have. There's something about biting into an apple crisp that still takes me back to being a kid at her house in the fall. It was one of her favorite desserts to make so it always makes me think of her.
