welcome from FL. I made a bay quilt for my first quilt and it was from a kit. It turned out pretty good. But my second attempt was a sampler and that was great because I learned many different techniques. I took a class and each square was the same size with sashing, (that helps square them up) You could make each square into a pillow if you decides you didn't want it in the quilt. It was really fun.
You could try a nine patch for a starter quilt or a log cabin. You can machine sew them and they go together quickly. Have fun and remember there rarely is a perfect quilt. We all have booboos when making our treasures.

Hi Emily and Welcome! I am a new quilter too. My first quilt (which was done this past summer) was just 12 inch blocks of cotton fabric and chenille put together. I don't think you can get any simpler than that!
