The quilt-as-you-go method I use is found on www.treadleon.net.

I like the idea of folding the fabric on plastic canvas. It makes the fabric easier to access than when folded and stacked.

Love your "space". What are plastic canvas panels that you have your fabric stored on? That makes your fabrics so visible to the eye - just like a fabric store.

I bought packages of crafting plastic canvas (like we used to needlepoint on) at my local Walmart (6 lg sheets for $4.24 I think). Then I cut them into fourths. Fold your fabric selvage to selvage, then the fold to selvages and then press as you go. Start folding around the plastic and I pin to keep in place. It's working great and I have even 6 plus yards on one.
