Hi, and welcome from Nevada from a gal that just moved here from La Crescent, MN! So I know your neck of the woods, so to speak.
I'm not sure I've ever used "Minky" fabrics, but I have used polyester and other "stretchy" fabrics. It can really be a nightmare. On the other hand, it doesn't have to be, and seeing that quilt that was posted makes me want to look up Minky the next time I go to the Quilting Store. Anyway, my solution was to use fusible fabric on the backs of the slinky or stretchy patches, as one of the others did, and that solved the problem. At the time, I was "stitching in the ditch, which is fine. On a lot of those stretchy patches, I'd then run a second stitch just inside the ditch, kind of an outline stitch. Usually my footplate was wide enough that I'd just keep the edge of that even with the ditch, and that would give me a second, even line around the patch, and hold that slinky material down better. It's not hard to do. There's a name for this kind of stitching, which completely escapes me at the moment, perhaps because it's 1:23 AM.
