Update Quilted Jacket Dilemma
Thank you everyone for your thoughtful consideration. I decided to make a band using the various fabrics and will attach all the way around front openings & neck/back. I was going to use an applique on the back but I think this jacket was a learning exercise and I'll wait to create a jacket using a pattern. This one is going to be a bit bulky in the top front.

I am not a seamstress but I have made a sweatshirt jacket. I made it a v neck. Because I have a large bust, the straight front didn't hang right above the chest. I just put the jacket on backwards, and marked where I wanted the V to fall on the jacket. I made a batik jacket also and used a 2 1/2 inch strip as a "binding to the edge". I folded it back inside and stitched it down by hand. Probably not the way a seamstress would do it but it fits my body and was easy in batiks.
