I saw this on a recent episode of Fons and Porter. They took the easy way out and just used the width of the fabric for the width of their quilt. What would be a good way to increase the width of the quilt? the one they did was so tiny that it is almost not worth making unless it was for a baby, and I'm long past that stage.

Instead of cutting the base fabric 1 WOF, cut 2 WOF and seam them together into 1 strip, now measuring abt 80 inches (2xWOF). That would be long enough to form a horizontal row across the top of a mattress.
Using a formula of: 1 ruffle has to be cut 2 times the length of base it is attached to(2X80), you would have to have 160 inches of fabric for each ruffle strip
Now, make as many strips with ruffles as you need to make the top.
If I were making it for my king bed, I would make a center panel of ruffled strips and frame that with borders making it large enough to extend over the sides of my bed.
