I have seen table runners and toppers made without any batting. They drape nicely, more like a scarf. I actually like them and would be so easy to quilt!

We do lots of lap quilts without batting and use flannel for backing. It is lightweight, doesn't slide off bed or lap and basically a year round quilt here in Texas.

You can also use them for a table cover, a shower curtain, a couch throw or a light weight quilt for summer weather.
Like Sandy said I have also done baby quilts with the fleece backing and no batting inside. They are snuggly warm but not too heavy to wrap the baby in.
Be sure and post a photo when you are done. crafty_linda_b

Here's to the Texas heat! Great idea about going lighter.
