What a grand thing for both of you to do. Her to give you the scraps and you to make quilts for those in need. I like the lady of the lake block but some think it is too complicated...it does require a bit of sewing. Just a thought...good luck!

Something like a tumbler, but with the triangles you have instead of the tumbler shape would be cute--just sew the triangles in rows, alternating wide/narrow ends and light /dark, then trim if needed and sew in rows--quick and easy!

The crumb pattern sewn on a foundation piece of muslin or just sewn together gives a fast colorful block which can be done any size with no cutting and very little waste if you are trying to get lots of charity quilts.
You only have cutting and loss when squaring the blocks.
Some groups make these with large and small pieces when doing charity work.

If they are big enough for 3" squares and are novelty prints perhaps you could make "I spy" quilts with narrow sashing between t he squares. I just made one with 5" squares but most of the prints were small enough that I could have used 3"squares.
