I've sewn for many, many years and thought I sewed straight lines. Evidently, I don't. When I started quilt making I realized I don't when I try to match up seams on my blocks. Oh, well, my motto is "better finished than perfect" and my quilt recepients don't complain.

I use a bandaid 1/4" from needle and still can't get it right after 15 years! That's ok as long as the quilt police aren't around. hehehehe

I have the same problem, especially with topstitching. A couple
of items I have learned is never ever watch the needle.
Watch either the marking on the foot or the edge of the fabric
where the foot should be, but never ever watch the needle.

When it comes to garment sewing, you can fudge a little on
the cutting. You cannot fudge on the cutting with a quilt.
It has to be right on the money. Otherwise, it does not fit
properly. I'm trying to be a little more careful when I cut.

In the meantime, laugh about it. I do.
