Even the Old Order Amish vary in the strictness of their Ordnung (for instance, in some Old Order communities it is okay to have electricity in the barn but not in the house).
It may also depend on whether the quilt was produced for an Amish family or for sale to the tourist trade. Many of the Amish are very pragmatic and canny about producing products that appeal to the most people.

National Geographic had an article about Amish quilting. Some communities stitch the tops and ship them - by the container full - overseas to be hand quilted. They ship them to Southeast Asia. And when the quilts come back, they are hand-quilted.
