I have a question on accuquilt in general. In can see where they would be helpful with different shapes, but I'm wondering if they would be very wasteful if cutting tons of 2 1/2" strips?

Actually, if you line up the fabric correctly, there is very little waste. In fact, I love the consistency. It is faster than if I do a large quantity by hand. Right, now I have been cutting scraps up for tumblers for a Bonnie Hunter project.
