Pale yellow always sparks my fancy. There has been pale peach, light blue, beige, dark navy, black and light pink backgrounds of my quilts. The whites are in there somewhere too with the scrap quilt tops.
I have been drawn to the light grey recently and I am thinking of buying some for a quilt in my mind.
Honestly, I don't think there is a wrong color if it works for the quilt.

I use white on white for my quilts I make with repo 30's fabrics as I like the way the fabric shows up. I use beiges on all of my Civil War fabric quilts. I like the way black fabric for background looks but I don't like to work with black fabrics so have never put that in any of my quilts. I made a quilt for my grandson and used a grunge grey and loved that fabric.

I like the tone on tone too. My first go to is white one white, but sometimes white is just not a good match. So I check out the other ones. Even though I love the way black pops when using many of the batiks I have not been able to bring myself to use it. Primarily because it is hard for me to see if I use black thread. I check out Marshall's Dry Goods for the 106 in. backing fabric when I am looking for a background that is going to require a lot of fabric.

Why limit your choices to a certain color or type of fabric? I think the background should and can be anything that sets off the blocks. If your block fabrics are solids or read like solids, why not a print for the background? REmember that there are no rules in this respect - what looks good to you and what best shows off the other fabrics/pattern?

I like charcoal-on-black prints. It really makes the colors pop, far more than white. I don't like solids and since what I prefer to make is lap quilts for donation, white gets dirty too easily. If I do use white it's a WoW.
I used red a couple of years ago for a mystery quilt, with black, gray, and white. Really came out nice.
