A friend didn't have enough fabric to bind her quilt so she joined a different fabric to the one she wanted for the binding. (2 " piece to a 1" piece) When she folded it the color she wanted for the binding showed and the "extra was hidden.

It really depends on what method you want to do. It will be very difficult for you to do the top stitching if you are doing the final step of binding by machine. If you wanted do the sewing by hand on the back, you will get a much skinner binding and have to do slivers of trimming to get the binding to fold over the 1/4 bulk of the outside seam allowance of the quilt. I worry about how often this quilt will be washed. My great aunt did single fold binding on an antique quilt top I bought from a great great Aunt. It has started to deteriorate even tho I have seldom washed it or exposed it to sunlight. Good Luck. This is a difficult decision to make.

I usually use 2" strips for binding, as I like a thinner binding. You should be fine. You can sew a few inches, then take it out of the machine and make sure you can turn the binding easily to the other side. If not, you either need to make your seam more scant or trim the quilt body after sewing the binding on (which is more work, and you need to be careful *not* to trim the binding itself at the corners).

2" strips will work if your edge is perfectly even, you keep to 1/4" seam for the binding, AND your batting is not very thick. If you're using a thicker batting like a polyester batting or you can't keep to a 1/4" seam, then the 2.5" is necessary.

Cut 1" strips of a complementing fabric (or the same fabric) and sew them to the 2" binding strips. This works well, although the binding will be somewhat bulkier.
I did this with 2" scraps from my grandkids button down shirts sewn together. I then added 1" strips of the backing fabric to the scrap strips to stablize the scraps. The scrap side was turned to the top of the quilt. As I said, it was bulkier, but it looks pretty good and was perfect for the quilt.

I haven't tried a 2" binding, but it should work, especially if you will be finishing it by hand. For machine binding I usually use 2-1/2" but a few times have done 2-1/4" if I was shy on fabric. It is a bit harder to finish that by machine. 2" would probably not work for that.
