I would rather take a beatin' than unsew. ;)

I see many quilts in shows in the NE area in which the back of the binding is about twice the width on the back as the front. Just be consistent and even and if you are stitching by hand on the back make sure the stitches don't dome thru to the front.
Consider it a Design Element and enjoy it. Everyone else will love it too ... except for a few disgruntled folk ... and that happens no matter what you do. Just listen to comments at a quilt show from the patrons and you'll hear what I mean.

What I have found to work best for me is to cut 2-1/2" strips, fold in half and sew about 5/16" from the edge. I can adjust my needle to the right of center, so I mark on a ruler where I want the seam and move the needle over. The 1/4" seam is too small and the 3/8" too big to get the results I like. This folds around just perfect and covers the seam line just a tad.

My thanks to everyone for some really good suggestions! This board is the best!!! I'm going to go with having a slightly wider binding on the back sewing it down carefully by hand so the stitches don't show on the front. I'll post pictures when it's done :) .

There are times when I have deliberately sewn so that the binding on front is narrower than the back side; especially when I've used a solid or one piece backing.
It gives the backside a better "framed" look I like.
You can see in these pics that the back side is wider than the front.

There is no reason to remove the binding. Just finish it with the wider back binding and practice mitered corneres, which don't have to be perfect either, for a baby. it will be loved and cherished. Nice quilt with no proplems that I can see!
But if it would bother you forever take it off and re-do!
