I guess I must be missing something or have been doing it wrong all along. When you sew your 2.5in binding to the front of the quilt and fold it to the back mine is always a little wider on the back. I have always had to fold a miter on the corners. I just thought this was the way it is done. Anyway, that is what all the books have taught me.

This is what I would do.
This is what I would do too.

I agree , just make a wider seam. I too make a 1/2 in. seam.

I, too, must be missing something. I always do a 2.5" binding unless it is a miniature or doll quilt. It ends up being about 3/4" after all the folding and sewing. What is to prevent you from turning more of the binding under when you sew it to the back? I guess I am more of a self taught quilter who doesn't know all the rules for doing it "right". I always try to do my best to the best of my knowledge (however, that is limited). I know you can make this turn out just fine. Just MHO

Me 3. I do it mostly because I don't want to take any chances that the binding on the back covers up my seam from attaching it. I always handstitch it down in the back.

There is no law that says it must be the same width. The binding looks great and I'll bet no one will notice that the front and back are not the same. You did a beautiful job.

Just to throw out another option, even if you've already made your decision and finished it up ... one of the quilting classes I took from a well-respected quilter - he always "FACES" his quilts. Just like garments, take that same binding (or wider, like yours), sew as usual to the quilt front, press it and completely turn it to the back, hand sew it down. The quilts do not have the framing effect that traditional binding gives, but his didn't need it :)

I've done this, it works very well and is a nice full binding.
