What a great story! I work at a community college running the non-credit program (fun classes) and there's a woman who takes a lot of our classes and she's blind and she quilts, makes clothes, knits, crochets and trains her own seeing eye dogs. Oh, and she learned to play the cello recently. She's been blind since she was a child.

What a fabulous lady. Loved the 'chicken n dumplings' bit.
