I like the first one best because of the randomness of it. It is just kid perfect and that is the purpose of I spy blocks. We don't make them for adults who might be 'savy' to color theory and order. The other two are quite nice but maybe not quite a kid friendly. I also think you are wise to think about the concept of UFO collection at this point in your quilting journey.

I vote for the second one as it the center squares seem to stand out more. I also like the randomness of the first one. Either way you can't lose. Go for one and I think you will be surprised at how well it turns out!

I like the first one, but would separate the reds from being side by side and put them into some of the areas where you have only light outer squares. Especially at the end of row 4 on the right and the beginning of row 5 on the left. Too much green together in row 5. On row 4, there are too much light colors together. Swapping them out will create more scrappiness.

Thanks, everyone, for your opinion. I'll go with random. They will have to be rearranged to get all rid of all the matching seams. (The person who hosted this swap said to alternate how you sash them, so you don't have any seams to match.) So, while I'm at it, I'll see if I can get the lights and darks to alternate for a more coordinated look.
