yes give yourself more room to work with, I always use a 2.5 unless it's a kit and you only have enough fabric for 2.25, in that case you don't have a choice.

It seems that I have very little fabric to work with. Did I do this right, or do I maybe need to cut my strips a bit wider? Thanks for all the help.

Just cut your strips wider, I cut mine 2 3/4 inches so I have plenty when I turn the binding to the back to hand stitch.

I cut mine @ 2 1/2" also. I've never had a problem. Would be afraid to go any smaller.

I cut bindings 2-3/4 inches wide and use a 3/8 inch seam allowance. Started doing this at my first basic quilt making class, and it works really well.

21/4" is just right. Give it a try, I think you will like it.

Thank you all so much for the great advice. I love this group. I will be sure to make the next binding strips wider than 2". I will let yall know how it goes.

2-1/2 works for me. I think 2 inch is a little skimpy, as you have found out.
