I only cut my scraps up into strips and squares. I always try to cut them at the largest measurement possible. I'm not into scrappy quilts but I may get a wild hair one day and whip one up. Or I'll offer the cuts up to someone who will use them.

When I've already used the bulk of the material on a project or two, I've started cutting the rest into various sized strips. Otherwise, I put it in a bin and forget I've got it. I'm trying to be more aware of how much and what type of fabrics I have.
