Found this trick by accident
I was ironing some fabric in half for binding and I realized I had basting spray on the fabric from sandwiching the quilt. I noticed that the binding was really easy to fold in half and was a much crisper fold - even without ironing.
Think I'll start spraying my binding along with a touch of ironing from now on. Has anyone else noticed this?

I have also found that my bindings actually turn better if I don't fold the strips first. It allows the turn-under part to be a bit shorter and the turn-over part to be a bit longer.
Edit: I should mention that I didn't become a believer until I finally tried it myself.

I fold mine in half once but I don't for the 2nd fold. So those of you that don't fold the strips first-you just hold the raw edges together and sew them down? I think I like this idea. I'll have to try it the next time.

I never iron my bindings. I just hold the two raw edges together as I stitch. Since I've already stitched once around the quilt to stabilize and hold those edges together it isn't hard to line up the binding edges. I like the softer fold when hand sewing the binding to the back of the quilt. It is easier to get a nearly invisible stitch that way.
