Number 1 is nice, however, on quilts 2 and 3, I'd like to see mitered corners to give the quilt some jazz.

I agree. No. 2 with mitered corners. That's a beautiful quilt and border and the mitered corners will be a great finish.

Simple mitered corners on #2 would be perfect if there is enough fabric. Otherwise, I would go with #1.
