Help understanding cutting fabric ????

I was told you shouldn't use the selvedge to square up because it is woven tighter than the fabric. I always cut the selvedges off and you can see the fabric "relax". It doesn't seem as evident if you are cutting short lengths across the width but the longer your strip is the more difference it can make.
