I, too, prefer to use 2 1/2" cotton binding, not flannel. Also, and I know not many will agree, I sew the binding onto the back first, fold it over to the front, and sew the front. I've found that I don't miss the edges this way, which I am more likely to do if I do the opposite. (I can't stitch by hand due to arthritis). I guess it is a matter of choice, but I have had no problems since I began attaching binding in this manner.
