I usually make scrap quilts so I buy 1 yard cuts of fabric.
If I think the fabric would make a good backing fabric for a crib quilt/lap I buy 1 1/2 yard cuts. If its a color that I don't use a lot I would only buy 1/2 yard cuts.

If the fabric is going to be used with other fabric in the quilt top, I would buy ~1 yd. For use in a border, ~3 yds, and if I love it and a large portion of the quilt with feature it, 6 yds. I buy most of my fabric this way and decide when I dig it out of my stash how it will be used.

Depends on the price, if its a good sale and I love it will buy maybe 5 yards. Regular price--mostly just buy what I know I need for a project. Most I ever invested in was a whole bolt. But that was prepared to dye fabric and I was having a class, so bought the whole bolt.
