How should I quilt this? Suggestions welcome

This is what I would do if I was quilting... SITD the whole quilt. Shaddow stitching around the elephants. The on point squares in border and cornerstones - dogwood stitch. In the sashings - double bubble, or wavy lines, or large "L"s & "e"s -- like you are practicing cursive penmanship.
Not too much stitching so the quilt stays fluffy and soft.

I agree with doing an echo for the elephant. I might also add an echo inside the ear. Because it is so linear, I might do a wavy gentle curve down thru the border and maybe one curly-que traveling thru the white triangles. This would make it very secure for of all the washing and loving it will get, but keep it soft and lovely as a baby quilt. It has such a happy feel! Great job.

OMG, this quilt is a 10 on the cuteness scale. I'm partial to elephants mainly because my DH told me once that I would buy an elephant if it was on sale (his commentary on me being frugal) so I love yours. I think I would just outline the elephants and their ears, this SID down the sashing and around the 4-patch pieces. Thank you for sharing this absolutely adorable quilt.
